A Few Variations

These are just a few flavor ideas of extracts and liqueurs for you to try. Use the smaller amounts for a 9-inch (23 cm) shallow pie pan.

Orange Pastry Cream

Substitute 1 to 2 tablespoons (15 to 30 ml) Cointreau or orange liqueur, or ¾ to 1 teaspoon orange extract, for the vanilla extract.

Elderflower Pastry Cream

Substitute 2 to 3 tablespoons (30 to 45 ml) D’arbo Elderflower Syrup for the vanilla extract.

Black Currant Pastry Cream

Substitute 2 to 3 tablespoons (30 to 45 ml) crème de cassis or other black currant liqueur or syrup for the vanilla extract.

Spiced Pastry Cream

1. Omit the vanilla.

2. Mix in with the sugar:

A small pinch of salt

2 to 2½ teaspoons ground ginger

½ to 1 teaspoon cinnamon

A few gratings of nutmeg
